I’m the first to admit that I’d love to have the time and energy to bake everything from scratch, but it’s tricky sometimes to find the time. So your going to see a new occasional series around here: Monday Mixes. In this space I’ll be sharing a bit about my experience with a different ready made mix. Today I’m going to describe Trader Joe’s Cinnamon Crumb Coffee Cake Mix. I can’t remember how much it cost now, but I remember thinking it was pretty reasonable.
Here’s the box:
First you’ll mix up the cake batter. When making the crumb cake you have two options – crumb in the middle and on the top or just crumb on the top. We chose the crumb on the middle and top option, so we spread half of cake batter in an 8 x 8 baking dish:
Then just whip up the crumb topping and put half of it over the first layer of cake mix. Then put spread the remaining cake mix over the first layer of crumb topping and add the last of the crumb topping and place it in the oven:
And you get this:
This coffee cake was outstanding – very sweet and cakey, yet crumbly too. Very good.
